Banana Brownie Waffles

I got a new cookbook for Christmas called "No Whine for Dinner," and it's had some really good recipes in it. So far I've tried 6 or 7 of the recipes and everyone has liked almost all of them. Here is one I made just yesterday that was amazing. I don't have a picture, sorry!

Banana Brownie Waffles:

Dry ingredients: 1 cup all-purpose flour; 1/2 cup whole wheat flour; 1/2 cup cocoa; 1/4 cup wheat germ; 3 Tbsp. granulated sugar; 1 Tbsp. baking powder; 3/4 tsp. cinnamon; 1/2 tsp. salt; Combine all above dry ingredients in a bowl. Set aside.

Wet Ingredients: 1 1/2 cups milk (I used Silk Coconut Milk); 2 ripe bananas, mashed; 2 large eggs, beaten; 1/4 cup canola oil; 2 tsp. vanilla extract; Combine above wet ingredients in a separate bowl. Then add to the dry ingredients and mix until combined. Cook in a preheated, greased waffle iron until done. Serve with maple syrup, or whipped cream. We had them with Cool Whip, sliced bananas, sliced strawberries, and chocolate chips on top. They were awesome!

What to Do?

Nothing exciting is going on here, just your same-old January. We just got back in the swing of things after Christmas, and now the two oldest kids are off-track for 3 weeks. Jorgen still has preschool, though. I am hoping to find things for them to do so they don't get bored. Any ideas???

At the first of the year we decided to start reading the Book of Mormon again as a family. It has been kind of hit-and-miss as far as consistency lately. So we made up a chart and started. Now we have a big dilemma and his name is Jorgen. He does not like scripture time! He does everything and anything he can to be disruptive and irreverent. It is kind of frustrating. We are reading straight from the scriptures, so it is a little too hard for him, but we try to let him have a turn repeating a verse. We have tried doing the easy readers with the pictures and he is the same way. We don't want to take him to time-out everytime he starts acting up during scripture time (or prayer time, he does it then too). I really feel he needs to be there with the family so he can feel the Spirit. But if we don't take him out he will just sit there and screech at the top of his lungs, or shut someone's book, or hit someone, or jump on the couch, or run around shouting, etc... I am kind of at a loss with what to do. The older kids, when they are able to concentrate, have actually been asking questions and making comments this time around, which is very encouraging and helps me to not give up. But what do I do with Jorgen? I am stumped on this one.

In other news, Bethany won her class spelling bee, then made it to the third round of the school spelling bee. She did really well with some really hard words. I am glad she didn't win because the next round of words were even harder - most of them I didn't know and had to look up the meaning and pronunciation. I was brain dead and forgot to take my camera to the spelling bee.

Andrew is meanwhile super excited for his birthday coming up (not until March). He has already typed a birthday wish list - all the things he didn't get from Santa are on the list. And he is looking forward to joining Cub Scouts and getting baptized on April 7th. I am hoping the baby doesn't decide to come early, at least not before the 7th. That would complicate things....

Jorgen, besides being a pill some of the time, is in a growth spurt right now and almost as tall as Andrew. He has finally decided it's okay to wear blue shirts once in awhile (instead of green), which is nice because most of Andrew's old shirts are blue. Except now when I just glance at the boys I sometimes mix them up because they are almost the same size. I am hoping Andrew also has a growth spurt coming soon.

Snow Day!

The forecast for Saturday was that we "might" get a "little bit" of snow, if we lived in the right places. We woke up to find about 4-5 inches! It has been so long since we have had any significant snowfall that the kids were just giddy with excitement. They stomped around and built snowmen and had a great time. Then we had hot cocoa afterwards. And I found out that both Andrew's and Bethany's snowpants no longer fit. Which means I need to get Bethany some new ones ASAP so she can go to the 4th grade ski day in February. I hope they aren't all sold out...

Trip to Star Valley

Over the New Year's weekend, we travelled up to Star Valley Wyoming to attend a baby blessing for our newest niece/cousin Abigayle Nay. She is the daughter of Joe and Kandice; Joe is Dan's youngest brother. The drive wasn't too bad, except for a few slick roads on the way. The scenery is quite spectacular.

This picture and the ones that follow are just some snapshots I took of the landscape outside Joe and Kandice's apartment in Bedford. It really is a gorgeous area. Since we have had such a lack of snow lately, it was nice to see some snow for a change. Even if it was 9 degrees (brr!)













The snow was frozen so hard that the kids could walk on it and not fall through. It was at least a foot deep.





I wish I could have taken a picture of the stars Saturday night. It was breathtaking. There is a reason it is called Star Valley. We decided we should go back in the summer sometime, when it isn't so cold. It's almost all the way to Jackson Hole, so we could make a trip out of it. Someday, maybe.



Sunday afternoon we drove home, and we stopped in Cache Valley on the way to meet another new baby in the family. Braxton Nay, the son of Sam and Jessica Nay. Sam is Dan's other younger brother.

It's a good thing we had Monday off from school and work, because after the weekend we were all exhausted. It was nice to sleep in one more day.

New Year's Eve-Eve

We knew we were going up to Star Valley on New Year's Eve, so we decided to celebrate the night before. We made lots of finger food and had a movie night. We didn't stay up till midnight, though. After the movie was done the kids went to bed around 9:30. It was a fun night.
